Observed establishment employees handling, cutting, and packaging open produce, which requires a class 3 retail food permit. Establishment currently operates under a class 2 retail food permit. PIC will determine if establishment shall increase existing class 2 retail food permit to a class 3 retail food permit or if food operations that involve cutting of produce shall be discontinued. Re-inspection will be conducted on 2/24/26 to confirm management decision on retail food operations.

Inspector's notes

Observed cardboard boxes of raw shelled quail eggs, duck eggs, and balut eggs stored on floor of retail space in front of open face cooler. Per person in charge (PIC), cases of quail/duck/balut eggs were received from delivery truck hour and a half prior to inspection and then immediately moved to floor retail space in front of open face cooler for regular storage to sell to customers. Except during preparation, cooking, cooling or when time is used as a control all TCS foods shall be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. All eggs improperly cold held were relocated to functioning refrigeration unit to rapidly cool to 41°F at time of inspection. Corrective Action: Corrected at time of inspection.
