Observed various TCS foods such as cooked rice, cooked rice noodles, and pork with an internal temperature ranging between 47-60°F. Per PIC, the food was cooked at 9 am. During time of inspection, the food had been cooling for over 6+ hours and had still not reached 41°F in the appropriate time frame. PIC discarded food during time of inspection (see embargo form). Ensure all TCS foods being cooled drop from 135°F to 70°F in two hours or less and subsequently from 70 to 41°F in four hours. Correct By: Corrected At Time Of Inspection
