Inspector's notes

In the dish washing area, observed the employee go from handling dirty dishes to handling clean dishes without washing their hands. When moving from dirty to clean dishes hands must be washed to ensure there is no contamination of the clean dishes. Employee was corrected and dishes were rewashed. On the cook line, observed an employee crack raw eggs and then later on handle a clean plate for service when putting the raw eggs on the plate. When going from raw to ready to eat or clean surfaces hands must be washed to prevent contamination of the clean plate. Employee was corrected.

In the egg prep cooler, observed pickled onions, shredded cheese, pesto with garlic in oil, cottage cheese, and gravy all between 45*F and 48*F. All foods had been in the unit less than 4 hours. Foods were moved to the walk in cooler to cool. The foods in the back and bottom of the unit were holding between 38*F to 40*F. Please ensure that all foods in the unit are holding below 41*F.
