Observed sliced ham, sliced tomatoes, steamed asparagus, and cooked chicken in cold holding units and drawers with an internal temperature of 45-53*F. Person in charge stated foods were cooked/prepped within 2 hours and were actively cooling. All foods should cool in units designed for rapid cooling. Person in charge removed foods and placed in walk-in. 3-501.15 (B) - Core: Cooling Methods; Covered and Properly Arranged Containers. Person in charge provided communication of pest control from visit on 8/6 and to continue treatment every 2 weeks until activity has been eliminated. 6-501.111 (A-B, D) - Core: Controlling Pests; Monitoring Predefined Comment: Establishment must be maintained free of pests and all pest control measures must be conducted by a licensed pest control specialist. Must eliminate current pest control problem and obtain pest control from a certified and licensed pest control specialist by re-inspection.

All units holding cold temperature controlled foods should hold an ambient temperature of 41*F or below. Person in charge to hold TCS foods designated for units in neighboring units at 41*F or below. Out of order signs placed on units. 4-501.11 - Core: Good Repair and Proper Adjustment-Equipment Predefined Comment: All equipment must be maintained in good repair at all times. Per person in charge, the sausage was cooked in the morning and placed in walk-in cooler to cool. More than 3.5 hrs had elapsed since sausage was placed in walk-in cooler. It was determined that the sausage did not cool properly because the container was over filled, tightly sealed with saran wrap, and stored in one of the lower racks of the speed rack. Discussed importance of air circulation during the cooling process. TCS foods must be cooled from 135*F to 70*F in 2 hours, then further cooled to 41*F in 4 hours.
