Inspector's notes

Observed open package of deli turkey dated 11/4/25 past the discard date. Notified person in charge and they voluntarily discarded - see embargo form. Also observed cut cantaloupe and honeydew without a date. Person in charge dated the cantaloupe and honeydew. The Food Code requires that TCS foods be discarded 7 days after opening/prep when held at 41F or less. Listeria is the pathogen of concern, which cannot be observed by looking at the food in question. Day 1 begins the date that a package of TCS food is opened, such as deli meats, or once cooked/prepped, such as noodles or proteins. Adding 6 to the start date (6+1) determines the discard date. Corrective Action: Corrected at time of inspection.

Physical facilities inspection. No food service occurring during the inspection. Equipment from the service kitchen has been removed, the dining area has a handwashing sink and steam table on wheels. PIC will remove the maintenance equipment from the service kitchen and re-install/make available the 2-compartment sink, handwashing sink, and the refrigerator if cold holding is necessary. Discussed closing the service kitchen permit if it is no longer needed. A permit is required when storing or handling open food. Emailed the Minimum Requirements and Construction Guide. All equipment must be commercial grade and NSF or equivalent. An apartment in the building was observed to be operating as a service kitchen with commercial cold holding equipment in a carpeted area. An NCIR was completed and information for applying for a permit was provided to PIC.No County legal action will result from this inspection.
