Observed several dishes that were stored as clean at the clean dishes rack according to the person in charge. Several dishes were observed to have stuck on date mark stickers, glue residue and in some other cases food residues were observed on the dishes. PIC relocated all food-contact surfaces to warewashing area to be washed, rinsed, and sanitized at the time of inspection. All food-contact surfaces must be cleaned to sight and touch. *2nd consecutive Priority Foundation violation.* Corrective Action: Corrected at time of inspection.

Inspector's notes

Observed a covered container of cooked and cooling noodles that had been placed into the walk-in cooler approximately 1 hour prior to the start of the inspection. The internal temperature of the noodles was around 84°F as measured using a probe thermometer. Discussed with person in charge to place cooling foods into wide, flat shallow pans that are uncovered and placed up high inside of the walk-in cooler. The person in charge removed the lid so the noodles could rapidly chill down to 41°F in the walk-in cooler. TCS foods must be cooled in: uncovered/loosely covered, shallow containers less than 4 inches deep, in equipment designed to rapidly cool, by using an ice bath, by using ice as an ingredient, or another effective means. Observed some dishes that were stored as clean at the clean dishes rack that upon separating, were observed to still have some food residues stuck to the inside of the pans. The dishes in question were returned to the 3-compartment sink to be washed, rinsed and sanitized at time of inspection. Discussed with person in charge to soak heavily soiled dishes in hot soapy water for an extended period of time to help loosen stuck on food if necessary. All food-contact surfaces must be cleaned to sight and touch. Corrective Action: Corrected at time of inspection.

Observed three compartment sink chlorine sanitizer measuring around 100-200ppm range with test strips. Discussed with PIC the appropriate chlorine sanitizer levels of 50-100ppm. Sanitizer was diluted by PIC to approved levels at time of inspection. Corrected at time of inspection. Observed medicine near prep area in the back of kitchen. Discussed with PIC that all medicines must be stored away from food, utensils, and single service items to prevent contamination.
