Inspector's notes

Observed a large covered plastic tray of cooked beef stew inside of the walk-in cooler. The internal temperature of the beef stew as measured using a probe thermometer was around 47°F. According to the person in charge, the beef stew had been cooked the night prior and then placed into the walk-in cooler to begin cooling down. Based on the time of inspection and the time that the food was placed into the walk-in cooler to begin cooling down, the food did not cool down within 6 hours and was embargoed at time of inspection (see embargo form). Cooked TCS foods must be cooled from 135°F to 70°F within 2 hours, and from 70°F to 41°F within 4 hours for a total of 6 hours for cooling. Corrective Action: Corrected at time of inspection.

Inspector's notes

Observed a large, deep uncovered plastic container of cooked and cooling beef soup with an internal temperature as measured using a probe thermometer of 114°F that had been placed into the walk-in cooler 45 minutes prior to temperature assessment. It was observed that the soup was approximately 8-10 inches in depth in the container. All TCS foods being cooled in deep containers were transferred to shallow containers to allow for rapid cooling. TCS foods must be cooled in: uncovered/loosely covered, shallow containers less than 4 inches deep, in equipment designed to rapidly cool, by using an ice bath, by using ice as an ingredient, or another effective means. Corrective Action: Corrected at time of inspection.
