No sanitizer available at time of inspection in establishment. Person in charge (PIC) stated they ran out today. All food-contact surfaces that contact TCS foods must be cleaned every 4 hours by washing, rinsing, and sanitizing. Discussed the importance of proper sanitizer levels and proper monitoring of sanitizer levels. PIC sent employee to store to purchase bleach at time of inspection. Employee returned and sanitizer was measured at 50ppm chlorine. Corrective Action: Corrected at time of inspection.

In the right cold table, observed a medium container of sliced ham with an internal temperature of 49-51 degrees F. Staff stated item was placed in cooler after preparation within the last hour. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. All TCS foods improperly cold held were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. Corrective Action: Corrected at time of inspection. Corrective Action: Corrected at time of inspection. Deli meats, tuna, sliced cheeses, cut lettuce and cut tomatoes in the cold table at 45*F to 51*F internally. TCS items in the unit less than two hours were moved back to the walk-in to re-cool. TCS items in unit for more than two hours were embargoed and manager discarded. Reviewed time control requirements with the manager. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below.
