Observed reach in refrigerator holding two containers of cut cantaloupe and a box of milk with an internal temperature of 55*F; the ambient temperature of the unit was at 57*F. Per the kitchen staff, they were unaware of how long those items had been holding in the unit; the TCS items were embargoed. This violation occurred because of employee verification; the temperature logs for the unit were not filled out since 4/20/26. Please ensure TCS food is cold held at 41*F or lower at all times. Corrective Action: Corrected at time of inspection.

During inspection observed two cut lettuces located in the reach in refrigerator shelf. The person in charge could not determine when the items were cut or and placed in storage. The person in charge voluntarily discarded them, and stated he would follow up with his staff to provide training for date marking, since the violation was due to staff training. Please ensure TCS foods requiring date marking are date marked within 24 hours and sold or discarded after 7 days (including the day it was made as day 1).
