Inspector's notes

Observed hard boiled eggs with an internal temperature of 51°F as measured using a probe thermometer. A min-max thermometer was used to measure the ambient air temperature inside of the refrigerated case. The min-max thermometer was allowed to stabilize in the unit for 15 minutes and after 15 minutes the ambient air temperature inside of the unit was holding steady at 53°F. The food had been in the unit for more than 4 hours at time of inspection and was embargoed (see embargo form). The refrigerator is marked out of service until it is repaired. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Corrective Action: Corrected at time of inspection.

Please refer to violation #22. Cold holding case is not holding at the appropriate cold holding temperature of 41°F or below. Cold holding equipment must have the capacity to maintain TCS foods at 41°F or below. Must repair cold holding equipment such that it maintains TCS foods at 41°F or below. A reinspection will occur for cold holding capacities within 10 days or no later than December 19th, 2024 for cold holding capacities. Corrective Action: Correct prior to re-inspection.
