Observed rolled chicken tacos and hot dogs at 48-50*F located in the cold holding drawers near the salad station, per PIC was placed into the unit two hours prior. Ambient air temperature taken of the unit was 53*F with a min/max thermometer. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. All TCS foods improperly cold held were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. Corrective Action: Corrected at time of inspection. 2nd repeat.

Observed in the top of the right reach in cold holding unit at the cook line Pico de Gallo at 50*F, mozzarella at 61*F, and sliced tomatoes at 52*F. Observed in the top of the left reach in cold holding unit on the cook line pickled peppers at 60*F and sliced tomatoes at 52*F. Per PIC the food was placed into the line at 9am when it was flipped for lunch service. Ambient temperature of the second unit was 39*F with a min/max thermometer, and the first unit was in defrost. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. All TCS foods improperly cold held were discarded by PIC at time of inspection. Discussed changing defrost cycles to times when the establishment is not open. Discussed professional maintenance regularly. Corrective Action: Corrected at time of inspection.
