Inspector's notes

Observed precooked sausage and bacon in the tabletop cold holding unit located in the cafe at 48*F-52*F, per PIC had been placed into the unit within the last 30 min to an hour. Ambient air temperature taken of the unit with a min/max thermometer was 56*F. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. All TCS foods improperly cold held were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. Corrective Action: Corrected at time of inspection.

Final construction inspection for a Class 2 0-9 E&D permit was conducted with owner Rob R. by appointment. The establishment was closed and not operating at time of inspection. This establishment/operation has demonstrated sufficient compliance to proceed with the issuance of the permit. To complete the permitting process, issuance of this permit, and begin operation, the applicant must first submit payment of the annual operating permit fee to the Department’s Administrative Services. Fees paid up to this inspection approval do not include the annual operating permit fee. PAYMENT with a credit/debit card can be made via phone at 602-506-6824, Option 2. Per MCEHC Chapter I, Regs 4 & 5, no person shall conduct an operation or operate an establishment for which a permit is required without holding the necessary and valid permit to do so. Payment with a credit/debit card can be made on-line via select “Pay a Fee” at esd.maricopa.gov. Please note that if you select payment via online, the annual operating permit fee invoice may take up to 7 business days to post online. Also, checks and money orders are accepted via US Mail. If you select payment via US Mail, for further instructions please refer to the printed invoice. No operating permit is valid, until the permit fee is received by the Department. Construction inspection for a Class 2 0-9 E&D permit was conducted with construction team without an appointment. The project is approximately 75% complete. The inspection was conducted as a status update for the permit. Please ensure the following items are addressed by the completion of the project: 1) Provide an ASSE 1013 reduced pressure principle backflow preventer for the RO system. The backflow preventer must be installed between the water supply line and the RO system. Provide an approved funnel drain assembly with an approved air gap plumbed to a floor sink to provide drainage for the relief valve of the backflow device2) Provide an ASSE 1022 dual check valve for espresso machine (stainless steel or plastic).3) Certify all testable backflow preventers and provide copies of the backflow preventer test certifications.4) Observed top set cove tile in the coffee bar area. Please provide a 3/8th inch cove to the junctures by providing a tool/finger cove with siliconized grout. 5) Ensure sanitary napkin waste containers are provided in all restrooms and stalls used by females. The equipment inspection is scheduled for Monday October 9th, 2023. MCESD inspection report was delivered via email. No County legal action will result from this inspection.
