Inspector's notes

Observed a three compartment sink with dishes staged to be washed, when asked what sanitizer the facility uses, PIC confirmed they used chlorine. When asked for test strips, PIC was unable to provide test strips, test strip container was empty at time of inspection. Educated PIC that sanitizer test strips are required for any sanitizers used with food contact surfaces. Provide sanitizer test strips prior to re-inspection. Correct prior to re-inspection on 3/10/26.

Inspector's notes

Observed TCS food being held inside a reach-in unit with an internal temperature of 45*F. Internal temperature registered with an internal probe thermometer. Ambient temperature of unit registered 45*F with min/max thermometer. Per PIC all TCS food items have been inside unit for 24hrs at time of inspection. TCS food items included; cartons of milk, ranch dressing, and string cheese. All TCS foods improperly cold held were discarded by PIC at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Facility will not place TCS foods inside unit until repaired to hold temperature of 41*F or less. Corrected at time of inspection.
