Observed Bolognese with cooked meat and tomatoes in reduced oxygen packaging for sale in front sales case. Date of packaging for Bolognese was 7/21, more than 48 hours. Also observed green sauce in ROP in meat room. PIC stated that green sauce was made with charred peppers and is added to meat mix for chorizo verde sausage. PIC stated sauce had been in package for about a month. PIC stated that items are put in ROP onsite. Establishment is not approved to ROP cooked meat Bolognese nor charred pepper sauce.
