It the walk-in cool cooler, products that were bottled/jarred during the week had internal temperatures of 46*F. The ambient temperature was 47°F. The PIC stated the rise in temperature was due to the door being left opened within the last couple of hours. The door was properly closed and the food items measured 43°F at the end of the inspection. The ambient temperature was measured at 38°F. Packaged food must be stored at 41°F for at least 5 days. Employees cleaning and scrubbing equipment with a Quat sanitizer, rinsing it off with water, followed-up by air drying. The person in charge (PIC) was informed of the issue. The PIC stated the employees mistook the Quat sanitizer as liquid soap. The PIC trained the employee on proper warewashing procedures in the 3-compartment sink. The 3-compartment sink set-up correctly by the PIC at the time of inspection by first washing/scrubbing with soap, rinsing with water, and sanitizing with Quat solution (200-400ppm).
