#25 — Consumer Advisory Provided for Raw or Undercooked FoodPriority foundation3-603.11

Inspector's notes

Observed aguachiles and ceviche made with shrimp marinated in lime juice (no heat cooking step) sold for retail sale in a display case near the bakery, missing the consumer advisory. Consumer advisory reminder statement is stated on the display case and the disclosure method (*) is placed on the name of each individual product. Offering and serving undercooked proteins requires an approved consumer advisory at all points of sale; and must contain an approved disclosure method and reminder statement.
