#22 — Proper Cold Holding TemperaturesPriority3-501.16

Inspector's notes

Observed various kinds of raw shrimp, octopus, scallops, and cooked shrimp with internal temperatures ranging 45*F-54*F at the display case. The raw shrimp and octopus that were out of temperature were placed higher on the display case and not touching ice. The scallops and cooked shrimp were in a separate display case on long metal pans. The time that these products were out of temperature was unknown by PIC at time of inspection. Informed PIC that these products need to be discarded. PIC discarded all improperly cold held items at time of inspection. Food was embargoed. PIC had staff add more ice to the units at time of inspection. Discussed with PIC that thawing may be a possible reason for the product being out of temperature in the display case. Suggested to PIC, once product is thawed, to place in the walk-in refrigerator or freezer unit until the product is cooled to 41*F. Suggested using a thermometer to take initial temperature of the products placed in the display case. Instructed PIC to make sure all the product is kept on ice to ensure proper cold holding. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. All TCS foods improperly cold held were discarded by PIC at time of inspection. Corrective Action: Corrected at time of inspection.

Some raw fish and shrimp were thawing in the 3-compartment sink with cold running water, but the water was only touching some of the fish and shrimp. Use containers for the fish and shrimp so that the water touches all of the product and then overflows out of the container. Corrective Action: Correct prior to next routine inspection.

Observed employee using gloves to place raw seafood into a bag for a customer. Employee then removed gloves, put on new gloves, and immediately began placing cooked octopus into a bag for a customer. Discussed proper procedures for when to wash with PIC- in between handling raw and cooked meat products. PIC educated employee and employee began properly washing hands. Also observed heavy grease buildup on the grill vents and attachments, and on the surfaces of the grease trap barrels in the back store room. PIC will clean and maintain. Spoke to person in charge about reinforcing when and how to wash hands with employees as often as possible and suggested that a hat be taken out of uniform if it needs to be adjusted often.
