Predefined Comment: All raw animal proteins must be stored below ready-to-eat (RTE) foods and stored according to cooking temperature at all times to prevent cross contamination. PIC properly stored all raw animal proteins according to the final cooking temperature based on the cooking parameters in § 3-401.11 of the Food Code.

Inspector's notes

Observed shredded mozzerella cheese, tomato jam, onion jam, raw beef patties and carne asada at 48-52'F in the two drawer reach-in under the grill top at the time of the inspection. Cooler was holding with an ambient temperature of 52.8'F at the time of the inspection. All TCS foods improperly cold held were discarded by PIC at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. A work order was submitted for the cooler to be repaired and will not be utilized until repair is completed.

Observed cut tomatoes and cooked mushrooms with temperatures ranging between 48-52*F in the top reach in cold holding units to the right of the cook line when facing the windows. Time/temperature control for safety foods should be colder than 41*F to prevent the growth of pathogens. PIC realized the food was double panned, blocking the air flow. PIC stated the food had been placed into the unit from the walk-in around 11am and placed the food back into the walk-in to rapidly cool. Correct By: Corrected At Time Of Inspection
