According to person in charge, items had been cooked and placed in the hot case about an hour prior. Discussed adding items like fried chicken and potato wedges pieces to the time as control policy. All items were recorded to be discarded after 4 hours from the time they were put in the hot case on the time as control sheet. Corrective Action: Corrected at time of inspection.
