Observed pre-portioned meals with grilled chicken, green beans and rice with an internal temperature of 122*F in upright warmer. PIC stated food had been in warmer for less than 1 hour would be served within 1 hour. Discussed options for using time as a control for food safety or increasing temperature of upright warmer.
