At the time of inspection there was no Certified Food Protection Manager on site. Per manager they accidentally signed up for, and tested, for a manager certificate through the liquor board. Observed multiple deceased American cockroaches throughout the establishment including small room with prep sink near the employee restroom and inside storage cabinets along the bakery side of the establishment. The establishment shall remove deceased pests immediately upon finding to prevent the attraction of additional pests into the facility. Per manager, pest control services are used. Corrective Action: Correct prior to next routine inspection.

Inspector's notes

Chicken salad, pasta salad, cut tomato, cut lettuce, and tuna salad with internal temperatures between 50 degrees F and 53 degrees F cold holding in a prep cooler across from the stove. Ambient temperature of the unit was found to be 48.9 degrees F using a min/max thermometer. All TCS foods improperly cold held were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. PIC stated they will call a technician to repair the unit. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Corrective Action: Corrected at time of inspection.
