Ran an empty chlorine warewashing unit for several cycles and unit generated 0ppm each time even after priming. The flow pressure of the fresh hot water sanitizing rinse in a warewashing machine shall be within the range specified on the machine manufacturer’s data plate and may not be less than 35 kilopascals (5 pounds per square inch) or more than 200 kilopascals (30 pounds per square inch). Person in charge placed a work order and out of order sign on unit and will have employees manually wash, rinse, and sanitize at 3-compartment sink. Establishment to continue to manually clean and sanitize dishes until a strength of 50-100ppm can be generated at mechanical warewashing unit. 4-501.113 - Core: Mechanical Warewashing Equipment, Sanitization Pressure. Observed sausages, blanched bacon, raw salmon, raw whole shell eggs in reach in refrigerator at cook line near fryers with an internal temperature of 56*F. Person in charge stated food was placed in unit over 6 hours prior to inspection. Manager had cook discard of food. A kitchen employee was observed handling dirty dishes and then procedures to handle clean dishes without washing hands. The person in charge (PIC) was informed of the issue and had employee wash hands immediately. Per FDA Food Code, food employees must wash their hands after any activity which may result in contamination of the hands this includes handling raw meats, touching bare human body parts (except arms), coughing or sneezing, using the toilet, and handling dirty equipment or utensils. Switching gloves only is not sufficient. A when to wash hands handout was given to the person in charge. Corrective Action: Corrected at time of inspection.
