Per recipe card posted at grill station, establishment reheats commercially precooked steaks to 140F on grill, dices and seasons steak, and places the seasoned meat in a steam table to hold hot. Diced, seasoned steak is transferred from steam table to warming units at serving line and placed on 4 hour time as control (item discarded after 30 minutes in serving line for quality purposes) as indicated by written policy and labels.

Chlorine sanitizer solution concentration at in-use mechanical dishwasher was measured at 0ppm. Chlorine sanitizer solutions for food contact surfaces should be maintained at 50-100ppm. Person in charge (PIC) primed sanitizer line and the required sanitizer concentration was established. PIC re-washed, rinsed, and sanitized recently cleaned dishes and utensils. Corrective Action: Corrected at time of inspection.

In the walk in cooler observed a large container of ready to eat (RTE) tahini sauce and a large container of (RTE) juice stored on the bottom shelf directly below several pans of raw chicken and a box of raw lamb. In the small reach in cooler by the kitchen entry door, observed several bottles of each sauce. Observed Yogurt dill sauce with a dairy base at 47*F, harissa sauce with tomato puree as an ingredient at 48*F, and a lemon herb sauce labeled keep refrigerated at 48*F. Unit was holding at 53*F on inspector's min/max thermometer. All temperature controlled for safety (TCS) foods in cold holding are required to be kept at 41*F or below. Per manager, all sauces were placed in the unit 2.5 hours prior. Sauces were moved to the walk in to cool. Please do not use this cooler for any TCS foods until it is repaired and holding at or below 41*F. Correct By: Corrected At Time Of Inspection

Of note: PIC is aware that mechanical low-temp dishwasher is not working properly and has to be manually filled and sanitizer concentration checked when doing each load of dishes. Recommended to run dishes through machine and then sanitize properly, allowing to soak for at least one minute, in quat sanitizer at three compartment sink as to not use excessive amounts of hot water. Best solution is to have dishwasher fully serviced and working appropriately.
