Inspector's notes

Observed tilapia, shrimp, Cajun-seasoned fish, salmon, and romaine lettuce at temperatures between 46°F and 52°F that had been placed in cooler at 11am, over four hours prior to inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. All TCS foods improperly cold held were discarded by PIC at time of inspection. Corrective Action: Corrected at time of inspection.

Notified PIC(Person in charge) According to PIC, zucchini had been placed 3 hours prior. PIC elected to discard zucchini rather than reheat to 165F.
