Inspector's notes
Observed a component inside the meat saw with dried red buildup. This red buildup was on the small, thin, vertical metal splash guard. This splash guard does not directly touch the blade but could result in a contamination risk. Alerted staff who cleaned and sanitized all components at time of inspection. Also observed fraying and damaged construction tape used to stabilize and quiet the machine. Alerted staff who replaced the construction tape at the time of inspection. All components of the machine need to be maintained as smooth and wipeable. Discussed physical contamination risks. Discussed cleaning frequency and maintenance with staff. Corrective Action: Corrected at time of inspection.
