Observed establishment not have readily available food probe thermometer. Establishment only had two analog probe thermometers onsite but no way to calibrate the thermometers for accuracy. One probe thermometer was being used as an ambient theremometer in the walk-in cooler, and the other probe thermometer had a temperature margin of error of more than 12F when tested for accuracy. Discussed obtaing functioning and accurate food probe thermometer that are readily accessible for use. Discussed how to properly calibrate thermometer and to retain equipment capacity to adjust manual calibration as needed. Discussed obtaining ambient theremometer for use inside the walk-in cooler.
