Upon entering establishment for inspection observed Person in charge (PIC) check customer out via register and proceeded to make next customer order sandwich. After that customer was check out via cash, PIC touched face. Inspector presented signature log with inspection rights and immediately after PIC re-gloved and entered kitchen to interact with food contact surfaces, PIC then took cell phone call and after conducted first hand wash during inspection. Hand wash was sub - 5 seconds. PIC was stopped and inspector discussed when hand washing was needed and length of time for an appropriate hand wash. Hand wash for 20- seconds was conducted.
