Inspector's notes

Observed multiple sanitizer buckets being used to sanitize wares and hold wet wiping cloths with sanitizer solution concentrations of over 500 ppm quaternary ammonia as measured on test strips. Quaternary ammonia sanitizer solutions should have a concentration of 150-400 ppm as per manufacturer recommendation. Discussed with PIC diluting sanitizer solution and checking concentration with test strips to ensure solutions measure 150-400 ppm quaternary ammonia. PIC called for service of the sanitizer dispenser at time of inspection. Sanitizer must be used at concentrations and in an approved manner per manufacturer instructions, 40 CFR 180.940, and 40 CFR 180.2020. Corrective Action: Corrected at time of inspection.

Observed the Hot water sanitizing dishwasher to have a maximum temperature of 151.1F, measured with a calibrated min/max thermometer. The minimum temperature required for hot water sanitization is 160F. Use 3 comp sink to manually wash/rinse/sanitize wares until the dishwasher is repaired and reaching the correct temperature. PRIORITY VIOLATION-4-501.114, P: Manual and Mechanical Warewashing Equipment, Chemical Sanitization- Temperature, pH, Concentration and Hardness. QAT sanitizer must test between 200ppm and 400ppm to properly sanitize wares. Manually add sanitizer to the 3 comp sink sanitizing basin and test to verify concentration.
