Inspector's notes

Observed reach-in cooler at left side of kitchen, closest to 3 compartment sink, at ambient temperature of 57-60°F holding pasties at internal temperatures of 56°F-57°F. All pasties had various cooked meat, vegetable and fruit fillings. Per Person in Charge (PIC) all pasties were date and time marked with some placed in the reach-in at 10:00am and others were in the cooler over night. PIC voluntarily embargoed all pasties that were held over night (see embargo form) and moved all pasties from the morning into walk-in freezer, saved pasties were re-temped at 40°F. During preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Corrective Action: Corrected at time of inspection.
