Inspector's notes

Observed several TCS foods (sliced ham, turkey, rotisserie chicken, and slice cheeses, cooked Roast beef, cooked eggs, Bologna, sliced onions) holding at 46-53*F in the farthest back section of right main prep table cooler. Per employees, all items had been loaded into cooler the day before. The two forward rows of prep cooler table are functioning. Left prep table cooler is functioning (41*F). All TCS foods were voluntary embargo at the time of inspection. Advised manager to take internal temp more frequently. Ensure all TCS foods are holding at 41*F or below. Repeat 2nd consecutive violation. Corrective Action: Corrected at time of inspection.

Observed several TCS foods (sliced ham, turkey, rotisserie chicken, and cheeses) holding at 45-53*F in top right section of main reach-in cooler. Per employees, all items had been loaded into cooler in the last few hours, and were immediately placed into walk-in cooler to bring down to 41*F before use. Per employees, service call had already been placed for unit and was expected same day. Left side of unit is functioning - reviewed proper cold holding practices. Ensure all TCS foods are holding at 41*F or below. Corrective Action: Corrected at time of inspection.
