Observed raw chicken, cooked beef curry and cooked vegetable curry without a lid in walk-in cooler on Aahwanam restaurant side of establishment. Person in Charge (PIC) covered all Ready to Eat (RTE) and Time/Temperature Control for Safety (TCS) foods at time of inspection. All RTE and TCS foods, if not actively being served, prepared or cooled, shall be covered while in storage to prevent cross-contamination. Corrective Action: Corrected at time of inspection.

#22 — Proper Cold Holding TemperaturesPriority3-501.16

Inspector's notes

Observed two reach in coolers back of house having an ambient temperature of 55°F with TCS food items with an internal temperature of no lower than 51°F including, raw in shell eggs, raw chicken, raw fish, curries, cut tomatoes, chopped garlic, chopped cilantro, chopped onions. PIC stated these items were stored last night in this cooler. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. All TCS foods improperly cold held were discarded by PIC at time of inspection. PIC stated that someone will come today to fix the reach in cooler and will cease use of the fridges until it is repaired. Corrective Action: Corrected at time of inspection.
