Inspector's notes

Observed various salsas (50-53 °F), cooked potatoes (51°F), and cheese (50°F) in a prep table by the cook line above 41°F. Staff stated they were putting small quantities of food in the unit to be used for orders as needed. The prep table measured 58.8°F on the min/max thermometer. All foods had been placed in the unit less than 2 hours prior to temperature measurement. No time control was being used for the foods in the unit. Discussed using ice baths to keep foods cold going forward until the unit can be serviced. The manager stated they were working with a third-party servicer who would fix the unit later today. Adequate alternative refrigeration is available to operate safely. Staff to use ice baths or alternative refrigeration until the unit can maintain at or below 41°F. Discussed the importance of cold holding with staff. Corrective Action: Corrected at time of inspection

Observed a 6-inch deep tray of cooked menudo in the walk in cooler registering an internal temperature of 47°F at 9am. Per the cook, the menudo was cooked at 2am the morning of the inspection. The establishment shall cool the cooked menudo from 135°F to 70°F within 2 hours and from 70° to 41° degrees within an additional 2 hours. The cook voluntarily discarded the menudo.
