Observed colby jack and hard salami wraps, snack trays, pepper jack, colby jack, roltini mozarella pepperoni rolls, string cheese, sandwiches (chicken salad, tuna salad, smoked american), parfaits, hard boiled eggs, ham, egg cheese biscuits, cheeseburger, sausage double cheese and bacon biscuits and rack o ribs sandwiches with an internal temperature of 46*F. According to PIC, technician was making repairs on display case, less than an hour prior to inspection and had previously moved food back to display case too early. All cold held TCS foods were moved to walk-in cooler to rapidly chill. Display case was holding ambient air temperature of 37*F at time of inspection.
