Inspector's notes
Observed cooked pasta, sliced turkey, roast beef, ham, raw chicken, hamburger patties, and cheese with internal temperatures between 47 degrees F and 56 degrees F cold holding in a cooler under the grill on the cookline. Ambient temperature of the unit was found to be 64.4 degrees F using a min/max thermometer. PIC stated that the breaker had tripped and that the cooler was below 41 degrees F about 2 hours prior to inspectors' arrival. Kitchen manager moved all TCS items to the walk-in cooler to rapidly cool below 41 degrees F. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Corrective Action: Corrected at time of inspection.

Inspector's notes
Observed cooked pasta, sliced turkey, roast beef, ham, raw chicken, hamburger patties, and cheese with internal temperatures between 47 degrees F and 56 degrees F cold holding in a cooler under the grill on the cookline. Ambient temperature of the unit was found to be 64.4 degrees F using a min/max thermometer. PIC stated that a technician was called at the time of inspection to fix the cooler. Establishment has plenty of cooler capacities to operate safely until the cooler is repaired. All equipment must be maintained in good repair at all times. Repair all equipment to a state of good repair prior to next routine inspection. Corrective Action: Correct prior to next routine inspection.

Notable areas include: A/C returns and surrounding areas of the ceiling, underneath equipment in the bar area, and non-food contact surfaces of kitchen equipment (e.g. legs/bottom shelves of tables, sides of refrigeration units). The establishment shall clean the kitchen and bar areas of the restaurant at a frequency to prevent the accumulation of dirt, dust, and other debris. Observed 4 tubs of partially cooked chicken wings on a metal rack in the walk-in refrigerator registering internal temperatures ranging between 48°-58°F. Per manager, the chicken wings had been partially cooked and placed in the walk-in to cool last night. The establishment shall cool their partially cooked, perishable food items from 135°-70° within 2 hours and from 70°-41°F within an additional 4 hours. The manager voluntarily discarded the chicken wings at the time of inspection. Per manager, a newly hired staff member was responsible for cooking & cooling chicken wings the night prior.
