Inspector's notes

Observed a variety of salsas and cooked vegetables, including jalapenos, located at the salsa bar registering internal temperatures ranging between 47°F-52°F. The salsas are held cold in a well using ice. Per manager, the salsas were placed at the salsa bar an hour prior to the time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Explained Time-As-A-Control procedure as a viable option if the ice is not an adequate means of holding the salsas at 41°F or lower to manager. The establishment will use Time-As-A-Control for any perishable food items at the salsa bar moving forward. Corrective Action: Corrected at time of inspection.

Soap dispensers at both sinks did not dispense soap. The establishment shall maintain the hand sinks in good repair, stocked with soap and towels, and accessible to promote proper hand washing practices.
