Observed whole milk holding at 48*F ( using a probe thermometer) in prep unit next to mixing station. Person in charge stated they placed the milk in the unit 30 minutes prior to inspection and confirmed the milk was holding at 41*F when placed in the unit. The milk was placed in main refrigerator and reached an internal temperature of 41*F prior to completion of inspection. Discussed with person in charge the importance of checking the temperature and function of the refrigerators that hold TCS products to ensure they are holding product at or below 41*F. Observed milk cooler next to mixing area holding at 50*F using a max min thermometer. Technician arrived on site at time of inspection ambient temperature was measured at 41F at time of inspection. Discussed ensuring that all holding equipment must be kept in good repair and have the capacity to hold food at or below 41*F or above 135* F. Reinspection will occur with in 10 days.
