Observed sliced turkey (47*F), american cheese (62*F), and cheddar cheese (50*F) in the top of cold reach-in unit to the left of the make-line. Ambient temperature of the top part of the unit was 47.3*F using min/max thermometer. Per the person in charge the american cheese and sliced turkey was placed in the unit from the walk-in less than four hours ago. The PIC placed the sliced turkey and american cheese in the walk-in to rapid cool. PIC was not sure when the cheddar cheese was placed in the unit and voluntarily discarded the cheddar cheese. Corrective Action: Corrected at time of inspection.
