Observed several sausage links being hot held on the flat top grill ranging from 115*F to 118*F using probe thermometer, verified by person in charge (PIC). PIC stated the sausage was prepared 30 minutes prior to inspection and had cook reheat the sausage to 165*F at time of inspection. Corrective Action: Corrected at time of inspection.

PIC directed employee to take off contaminated gloves and wash hands.
