Inspector's notes

Observed spicy mayo sauce containing egg yolks sitting on counter top. Internal temperature of spicy mayo was 65*F when measured with probe thermometer. According to person in charge (PIC), mayo had been sitting out for about 3 hours. Discussed promptly putting spicy mayo back in refrigerator after using to avoid increasing temperature, causing pathogen growth. Mayo was moved to refrigerator to cool at time of inspection. Corrective Action: Corrected at time of inspection.

Observed hot rice and meat bowls on time as control. Written policy was correct, but observed no documentation for keeping track of discard times for rice bowls. According to PIC, rice bowls had just reached the time limit and were discarded at time of inspection. Please create a method of documenting discard times and provide to inspector prior to re-inspection on 10/23/25. Example: writing discard times on a piece of paper, setting a timer for 4 hours, putting a sticker on bowls with discard time. Corrective Action: Correct prior to re-inspection.
