Observed the bar dish machine running at 147.7*F. Not actively in use at time of inspection. Operator is in the process of obtaining maximum temperature registering thermometer for the high temperature dish washers. Operator agreed to wash all bar dishes in the kitchen machine until it is capable of properly sanitizing. All equipment must be maintained in good repair at all times. Repair all equipment to a state of good repair prior to next routine inspection. Corrective Action: Corrected at time of inspection.

Obtain maximum temperature thermometer prior to reinspection on 5/7/2026. Sanitizing using high temperature warewashing machines requires an irreversible measuring device to ensure food contact surfaces reach 160°F. PRIORITY VIOLATION-5-402.13, P: Conveying Sewage Observed floor drain providing drainage for main dishwasher blocked and overflowing at time of inspection. Dishwashing was moved to 3-compartment sink in separate area for dish washing. Person in charge had a plumber come out at time of inspection. Observed employee wipe down counters with sanitizer rag and switch gloves and return to food prep area without washing hands. Spoke to person in charge about reinforcing when and how to wash hands with employees as often as possible and suggested that a hat be taken out of uniform if it needs to be adjusted often.
