Inspector's notes

Observed cut cabbage and Mozzarella cheese in the main cold holding unit on the cook line having internal temperatures of 57-62*F. Person in charge states the cheese had been in the unit for at least 4 hours prior to inspection while the cabbage was placed no more than 1 hour prior to inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. The cabbage improperly cold held was placed on Time as a Public Health Control while the cheese was voluntarily disposed of. Corrective Action: Corrected at time of inspection.
