Observed cream of coconut/73°F held at room temperature in one of the metal dispensers behind the counter closest to the main entrance. According to the manufacturer packaging, the product shall be refrigerated after opening. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. According to the person in charge the cream of coconut had been held at room temperature since this morning (4+ hours). Person in charge discarded the cream of coconut at time of inspection. Corrective Action: Corrected at time of inspection.

Observed cooked boba/ tapioca pearls (55°F) held using 4 hour time as a public health control (TPHC) with 2PM discard time in open top prep cooler. According to the person in charge the boba was removed from temperature control at 10AM. Time/ temperature controlled for safety foods held using 4 hour TPHC must be sold within the 4 hours or discarded. The boba/tapioca pearls were discarded at time of inspection.
