Observed refrigerated unit in cook area to be holding hot dogs with internal temperature measured to be 51-52*F, and cheeses with internal temperature measured to be 51*F. Per Person in Charge temperature of unit was not checked this morning, and items have been in unit at least overnight. PIC noticed that temperature gauge dial was off and setting was not where it should be. PIC re set and temperature of unit dropped below 40*F after several minutes. PIC unsure of how long food items have been out of temperature so voluntarily discarded, see embargo. Correct By: Corrected At Time Of Inspection
