Predefined Comment: Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. With inspector’s min/max thermometer observed the small walk-in refrigerator with a minimum ambient temperature of 54.1°F. Observed “Don’t use” sign on the door. According to the person in charge the refrigerator was holding below 41°F, but has been opened and closed too much prior to food preparation at 3PM or was going through defrost cycle. Predefined Comment: All TCS foods improperly cold held were relocated to the two other walk in refrigeration unit to rapidly cool to 41°F at time of inspection. Other walk-in refrigerators observed functioning and holding TCS foods below 41°F. Instructed person in charge to discontinue storing TCS foods in the small walk-in cooler unless it maintains 41°F at all times. Corrective Action: Corrected at time of inspection.

The wastewater outlet for the dish machine was re-routed to the three-compartment sink drain that is functioning properly prior to the routine inspection.
