PIC provided hand drying provision for handwash sink at time of inspection. Inspector's notes
Observed half and half creamer portioned into Torani syrup bottles in 3 door reach in cooler near monitors holding at 45-47*F. Digital thermometer of reach-in unit read 36*F, analog thermometer in unit read 42*F. Internal ambient temperature of reach-in cooler was determined to be 43*F via min-max thermometer. Asked employees to remove necessary creamer needed to fulfill orders for the next half hour and keep on ice. Instructed employees to keep cooler closed during that time in order to return half and half to proper cold holding temperature range. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Corrective Action: Corrected at time of inspection.

Observed a container of whole limes stored under a bag of pot and pan cleaner on wire shelf in dishwashing area. Chemicals must be stored away from food, utensils, and single service items at all times to prevent contamination. Limes were put in an alternate location and discussed storage with manager.
