Ambient temperature of the bottom of the unit was 48.2*F using min/max thermometer. Per the person in charge, the food items were placed in the unit at 3 am from the refrigerator, time of inspection was 1:00 pm. The sausage patties that were 44*F were relocated to the refrigerator to rapid cool to 41*F or below. Corrective Action: Corrected at time of inspection.
