Observed two sanitizer buckets to have a quat concentration of 0-100ppm. Discussed with person in charge (PIC) about ensuring staff wait a couple of seconds when running the sanitizer at the three comp sink before filling buckets. All wet wiping cloths must be stored in sanitizer buckets with approved sanitizer concentrations (Quat 200-400ppm). Wiping cloths were placed in sanitizer buckets with approved sanitizer concentrations at time of inspection. Corrective Action: Corrected at time of inspection.

Inspection conducted with badge # 318. This establishment is not participating in the award program at this time and had 0 Priority, 0 Priority Foundation violations on this inspection. Upon inspection of the soda syrup racks, observed 2-3 fruit flies around the soda syrup nozzles and hoses. There was not a large enough to be considered an infestation and the management was aware of the problem. PIC stated that they try to set up fruit fly traps and are actively seeking a large full restaurant fumigation to destroy all the flies before summer picks up. Educated PIC on approved traps for fruit flies and proper cleaning of the nozzles to reduce the likelihood of repeat fly infestations.
