Observed RTE hot sandwiches being held under time as a control with no time stamps. Time as a Public Health Control requires written procedures detailing process for Time as a Public Health Control and time-stamping for items actively held under Time as a Public Health Control. All TCS foods being held under time as a control were properly time stamped at time of inspection. Corrective Action: Corrected at time of inspection.

Observed sani bucket to have a chlorine concentration of 200ppm. Discussed approved use of sanitizers with the person-in-charge (PIC). Sanitizer must be used at concentrations and in an approved manner per manufacturer instructions, 40 CFR 180.940, and 40 CFR 180.2020. Sanitizer was diluted by PIC to approved levels at time of inspection (50-100ppm). Corrective Action: Corrected at time of inspection.

Observed sanitizer bucket with wiping clothes to have a chlorine concentration of 0ppm. All wet wiping cloths must be stored in sanitizer buckets with approved sanitizer concentrations. Approved sanitizer concentrations for chlorine is 50-100ppm. Wiping cloths were placed in sanitizer buckets with approved sanitizer concentrations at time of inspection. Corrective Action: Corrected at time of inspection.

Inspector's notes
Observed establishment to be using sanitizer buckets using chlorine. No chlorine test strips were present at establishment. Establishment has three compartment sink with auto dispenser for quat, dispenser is currently not working properly. Instructed staff to hand dilute chlorine in sanitizer compartment for three comp sink until dispenser is fixed. Quat test strips were discolored. Informed staff that quat test strips shall be present when using quat sanitizer. Test strips are required for any sanitizers used with food contact surfaces. Provide sanitizer test strips prior to re-inspection. Corrective Action: Correct prior to re-inspection. Re-inspection scheduled for 2/13/25.
