Inspector's notes

Four containers of shredded lettuce-46-48F in the reach in cooler under the make line. PIC stated that the lettuce had been in the unit for an extended amount of time and discarded-see embargo form. Cream-45-47F in the creamer unit in the drive thru area. PIC stated that the cream had been in the unit for about two hours and relocated to the walk in cooler. Keep TCS foods in cold holding at 41F or below. **Ambient temp of the reach in cooler below the make line was 46-47F and ambient temp of the creamer unit was 49F. Both units were found gapped open at time of inspection. The creamer unit was not able to be closed. The PIC stated that both units would not be used to store food items and would be scheduled for maintenance and/or repair to ensure both units are able to properly close. Establishment has sufficient refrigeration. Corrective Action: Corrected at time of inspection.
