The person in charge stated all foods had been stored in the reach-in cooler for more than 4 hours. TCS foods included cooked rice, cooked beef/chicken/pork, cooked beans, cooked sauces/salsa, cut leafy greens, dairy creams, shredded cheese, deli meats, and raw beef/pork. All improperly cold-holding TCS foods were embargoed at the time of inspection.

Predefined Comment: No County legal action will result from this inspection.Observed multiple extension chords extending over food prep areas and along the floor in close proximity to the mop sink and exposed water. The extension chords were being used to power the reach in coolers which were located along the opposing wall thereby intersecting and area of high foot traffice of employees. Observed extension chords had loose connections at the power supply contact points which could be easily disconnected and thereby interupt power supply to the reach in coolers. Observed employees have to constantly adujst placement of the extension chords to move around them and to check connection to the reach in coolers. Discussed potential electrical hazard as well as proper equiment maintenance. Ensure adequate permanent wiring and outlets are available in the establishment to minimize the need for extension cords. Provide safe operating environment to ensure proper function of cold holding equipment and protect food/food equipment against contaminiation from environmental factors.
